Raw ground beef keeps 1 to 2 days in the refrigerator at 40°F or below, and 3 to 4 months in the freezer. Once it is cooked, the window changes to 3 to 4 days in the fridge and 2 to 3 months frozen.
| Ground beef | Where | How long it keeps |
|---|---|---|
| Raw, in its pack or loose | Fridge, 40°F or below | 1 to 2 days |
| Raw | Freezer, airtight | 3 to 4 months |
| Cooked, browned or in a sauce | Fridge, airtight | 3 to 4 days |
| Cooked | Freezer, airtight | 2 to 3 months |
| Any ground beef | Room temperature | 2 hours maximum |
| Thawed raw mince | Fridge | 1 to 2 days, then cook it |
Why raw mince has the shortest window
Grinding spreads bacteria through the meat instead of leaving them on the surface. A steak can be seared on the outside and stay pink inside, but mince is mixed, so every part of it has been exposed. That is why raw ground beef gets one to two days when a whole cut gets three to five, and why it must be cooked all the way through.
The clock starts when you buy it, not when you open the pack. If the pack has been in your fridge for two days before you plan the meal, it is already at the limit.
Storing raw ground beef
- Keep it in the coldest part of the fridge, on the bottom shelf, in a container or on a plate so nothing drips onto other food.
- Leave it in its original vacuum pack until you are ready to use it, or decant into a sealed container if the pack is damaged.
- Freeze it on the day you buy it if you will not cook it within two days. Freeze flat in portions for faster thawing.
- Thaw in the fridge overnight, or in a sealed bag under cold running water. Never on the counter.
- Cook thawed mince within two days, and do not refreeze it raw.
Cooked ground beef and leftovers
Browned mince, bolognese, taco filling and meatloaf all keep 3 to 4 days in the fridge. Cool them quickly, in a shallow container rather than a deep pot, and refrigerate within two hours of cooking. Reheat to 165°F and reheat only what you are eating.
Freeze cooked ground beef dishes for 2 to 3 months. Sauce-based dishes freeze better than plain browned mince, which dries out and goes crumbly.
How to tell if ground beef has gone bad
- Smell: sour, putrid or ammonia-like. Fresh mince smells mild, almost of nothing.
- Feel: tacky or slimy on the surface, or meat that has gone sticky and lost its spring.
- Look: grey-green patches, dark edges, or any mould.
Grey on the inside is not a spoilage sign. Ground beef browns and greys as the pigment reacts with oxygen, and a grey interior on fresh mince is normal. Colour on the surface, combined with smell or slime, is the thing to act on.
Common questions
Can you cook ground beef after 3 days in the fridge?
No. Raw mince is past its window after two days. Three-day-old raw mince should go in the bin, not the pan, because cooking kills bacteria but does not remove the toxins some of them leave behind.
Can you freeze ground beef that is about to expire?
Yes, if it is still within its one to two days and smells normal. Freeze it immediately rather than leaving it another day, and label it with the date. Do not freeze mince that has already turned.
Does ground beef last longer if it is vacuum sealed?
Vacuum sealing extends quality, not the safety window. Keep to one to two days in the fridge regardless, or freeze it.
How long can cooked ground beef sit out?
Two hours, or one hour if the room or the car is above 90°F. After that the risk climbs and reheating will not undo it.
